Easy "Gourmet" Dinner | Parmesan Crusted Chicken


New year, new recipes! If you’re like me, you are still stuffed from all of the holiday dinners, desserts + cocktails! I personally am relieved that it’s finally time to get back into our routine & normal healthy lifestyle. Nick & I are constantly eating chicken, so I am always looking for new ways to spice it up & add flavor, and this recipe does JUST that! After my first bite of this Parmesan Crusted Chicken, I knew I struck gold! The flavor is amazing, and I love the crispiness of the outer layer. Serve this with a salad or side of veggies, and you have the perfect healthy meal. It’s light & easy to make - perfect for meal prep or a quick “gourmet” weeknight dinner!


  • 2 lb. boneless skinless chicken breast (if you can get it pre-sliced thin, that will save you a lot of time!)

  • 1 egg

  • 1 tbsp. water

  • 1 tsp. garlic salt

  • 1 tsp. salt

  • 1 tsp. pepper

  • 2 cups shredded parmesan cheese (make sure it’s SHREDDED!)

  • 4 tbsp. butter or olive oil

  • 1 squeezed lemon


  • Cut each chicken breast in half (if they are not already thin-cut)

  • In a shallow bowl, beat egg, squeezed lemon juice & water together until blended

  • Add garlic salt, salt & pepper into egg mixture until blended

  • Place parmesan onto a plate

  • Place large skillet or pan on high heat, and place butter or oil in it & allow it to melt

  • Dip each piece of chicken in egg mixture, making sure to coat it throughly

  • Place dipped chicken into parmesan, gently press & make sure the chicken is coated in parmesan. Flip and repeat on other side

  • Place coated chicken in butter or oil, and do not move until the edges are browned & crispy (I would say about 5 minutes)

  • Press chicken with spatula and turn over, do not move until the other side is also browned & crispy

  • Remove from pan and serve immediately
