Brown Sugar Roasted Carrots Recipe

Actually, it tastes more like a dessert - they are just so full of sweet flavor! This recipe bakes and seasons the carrots to perfection. With the light brown sugar & sugar-free maple syrup, it’s not as bad for you as you think! Serve them right out of the oven so that they are still soft, sweet and flavorful to enjoy!
1 lb. carrots
2 tbsp. unsalted butter
2 tbsp. balsamic vinegar
2 tbsp. light brown sugar
1 tbsp. honey
1 tbsp. sugar-free maple syrup
1 tsp pumpkin pie spice
1/2 cup water
WHAT TO DO:
Preheat oven to 400 degrees.
In a small saucepan over medium heat, add butter, brown sugar, honey, maple syrup, water, balsamic vinegar and pumpkin pie spice. Stir and bring to a boil.
Lay carrots on a baking sheet lined with parchment paper. Pour warm mixture over carrots.
Bake for 20 minutes or until tender. Serve immediately.
