Brown Sugar Roasted Carrots Recipe

See, vegetables can taste good! These Brown Sugar Roasted Carrots are the perfect compliment or side dish to almost any dinner, especially during the holiday season! Actually, it tastes more like a dessert - they are just so full of sweet flavor! This recipe bakes and seasons the carrots to perfection. With the light brown sugar & sugar-free maple syrup, it’s not as bad for you as you think! Serve them right out of the oven so that they are still soft, sweet and flavorful to enjoy!

SHOPPING LIST:

  • 1 lb. carrots

  • 2 tbsp. unsalted butter

  • 2 tbsp. balsamic vinegar

  • 2 tbsp. light brown sugar

  • 1 tbsp. honey

  • 1 tbsp. sugar-free maple syrup

  • 1 tsp pumpkin pie spice

  • 1/2 cup water

WHAT TO DO:

  • Preheat oven to 400 degrees.

  • In a small saucepan over medium heat, add butter, brown sugar, honey, maple syrup, water, balsamic vinegar and pumpkin pie spice. Stir and bring to a boil.

  • Lay carrots on a baking sheet lined with parchment paper. Pour warm mixture over carrots.

  • Bake for 20 minutes or until tender. Serve immediately.
