Easy Weeknight Dinner | White Sauce Chicken Enchiladas
*healthy substitutes are bolded
Small flour tortillas (sub. low carb whole wheat tortillas)
3 tbsp. flour
2 cups low-sodium chicken broth
1 cup sour cream (sub. plain greek yogurt)
2 1/2 cups shredded grilled chicken
2 1/2 cups Monterey Jack Cheese (sub. reduced fat cheese)
3 tbsp. butter
4 oz can diced green chillies
*Preheat oven to 350 degrees
Melt butter in a pan over medium heat.
Stir flour into butter and whisk for 1 minute over heat.
Add chicken broth into butter/flour and whisk until thick.
Take off heat, add in sour cream & chillies. Stir until thick. Set aside.
Combine shredded/chopped chicken and 1/2 cup of cheese.
Fill tortillas with the chicken/cheese mixture and roll, and place into greased 9x12 pan.
Pour white sauce mixture over enchiladas and add remaining 2 cups of cheese on top.
Bake in the oven for 20-25 minutes or until cheese & top of tortillas are brown.
