Easy Weeknight Dinner | White Sauce Chicken Enchiladas

SHOPPING LIST:
*healthy substitutes are bolded

  • Small flour tortillas (sub. low carb whole wheat tortillas)

  • 3 tbsp. flour

  • 2 cups low-sodium chicken broth

  • 1 cup sour cream (sub. plain greek yogurt)

  • 2 1/2 cups shredded grilled chicken

  • 2 1/2 cups Monterey Jack Cheese (sub. reduced fat cheese)

  • 3 tbsp. butter

  • 4 oz can diced green chillies

INSTRUCTIONS:

*Preheat oven to 350 degrees

  1. Melt butter in a pan over medium heat.

  2. Stir flour into butter and whisk for 1 minute over heat.

  3. Add chicken broth into butter/flour and whisk until thick.

  4. Take off heat, add in sour cream & chillies. Stir until thick. Set aside.

  5. Combine shredded/chopped chicken and 1/2 cup of cheese.

  6. Fill tortillas with the chicken/cheese mixture and roll, and place into greased 9x12 pan.

  7. Pour white sauce mixture over enchiladas and add remaining 2 cups of cheese on top.

  8. Bake in the oven for 20-25 minutes or until cheese & top of tortillas are brown.
